How to Use Sea Moss Gel (and How Much Is a Serving)

The serving is 2 tablespoons a day. Here is how to stir sea moss gel into smoothies, porridge, hot drinks, cooking — or take it neat — plus storage that makes a jar last.

Learning how to use sea moss gel takes about a minute. It is a fresh, mild, jelly-textured food that stirs into almost anything, and the only rule worth memorising is the serving: 2 tablespoons (30g) a day. This guide covers the serving size, the ways it works best in food and drinks, when in the day to take it, and how to store a jar so it lasts.

The serving: 2 tablespoons a day

One serving of our gel is 2 tablespoons, about 30g, once a day. Use a proper measuring tablespoon rather than a soup spoon and a guess — a heaped serving spoon can easily hold double.

More is not better. Sea moss is a seaweed and seaweeds contain iodine, so the serving size exists for a reason. Iodine is a nutrient with a sensible range: the labelling Nutrient Reference Value is 150µg a day, NHS guidance is that up to 500µg a day from supplements is unlikely to cause harm, and EFSA's tolerable upper intake level is 600µg a day from all sources for adults. Because iodine in seaweed varies with species, water, season and processing, we do not print one universal number — the tested figure for your batch is on the jar label and on our Lab Results page. If you also take a multivitamin, kelp or another seaweed product, count those too.

For completeness, the only authorised nutrient claims are about iodine itself: iodine contributes to normal thyroid function, to normal cognitive function, to normal energy-yielding metabolism, to the maintenance of normal skin, and to the normal functioning of the nervous system. That is the full extent of what may be claimed, and it refers to iodine as a nutrient rather than to sea moss as a product.

Two practical notes before the recipes. Use a clean, dry spoon every single time — this is the difference between a jar that lasts and one that spoils early. And measure straight from the fridge; the gel is firmer when cold and easier to portion accurately.

In smoothies

This is where most people start, because the gel disappears completely. Blended, it adds body and a slightly thicker, silkier texture, and you will not taste it against fruit.

Add your 2 tablespoons with everything else and blend for a few seconds longer than usual so it fully disperses. It works with any combination — banana and mango, berries and oat milk, spinach and pineapple, or a plain milk-and-date base. If you like a very thick smoothie, freeze the fruit and keep the liquid low; the gel will do the rest.

One tip: if you blend a batch for two or three days, only add gel to the portion you are drinking now, and keep the rest plain in the fridge. That way each day's serving stays accurate.

In porridge, yoghurt and overnight oats

Warm porridge takes gel well. Cook the oats as normal, take the pan off the heat, then stir the gel through at the end. Off the heat, it melts into the porridge and thickens it slightly without changing the flavour much — ours is blended with lemon, lime and cinnamon, which sits naturally alongside oats and honey.

In yoghurt, stir it through cold and it stays as fine flecks of gel; some people prefer it whisked in first with a little honey so it fully combines. For overnight oats, add the gel with the milk before it goes in the fridge and it will be entirely integrated by morning. Overnight oats are the easiest version of all this, because you measure once the night before and have nothing to think about at breakfast.

In tea, coffee and warm drinks

Gel dissolves in hot liquid, which is worth understanding rather than being surprised by. Sea moss gel sets because of what it is; heat it and it loosens, so a spoon stirred into hot tea or coffee will not stay jelly-like. It thins out and mostly vanishes, leaving a slightly rounder mouthfeel.

Practical version: pour the drink, stir the gel in while it is hot, and drink it as normal. In coffee it is undetectable. In strong black tea you may notice a very slight body change and nothing else. In something milky — a latte, a hot chocolate, a golden turmeric milk — it blends in seamlessly.

If you would rather keep the set texture, add it to something cold or only warm, not boiling.

In soups, sauces and baking

Because it thickens, gel is genuinely useful in cooking, though this is where portioning gets easier to lose track of.

In soups and stews, stir a serving in at the end, off the heat, the way you would swirl in cream. In sauces, gravies and dressings it thickens slightly and helps things emulsify. In baking, it can be folded into a batter with the wet ingredients.

Two honest caveats. First, if you are cooking for a family, the pot no longer contains one serving — it contains one serving spread across however many bowls, which means nobody is getting the stated amount. If daily intake matters to you, add the gel to your own bowl rather than the pan. Second, prolonged high heat will change the texture, so late additions work better than early ones.

Straight from the spoon

Plenty of people skip all of the above. Ours is blended with lemon, lime and cinnamon specifically so it is pleasant taken neat: mild, slightly citrus, faintly of the sea. Take your 2 tablespoons cold from the jar, and follow it with water if you would rather not have the texture linger.

If you are unsure whether you will like it, start this way once so you know what plain gel is actually like, then decide how you want to take it from then on.

When in the day to take it

Whenever you will remember. There is no evidence-based best time, and any brand insisting on one is embellishing.

In practice, morning wins because it attaches to something you already do — coffee, breakfast, a smoothie — and habits attached to existing habits survive. If your mornings are chaotic, evening works equally well: stirred into yoghurt, or into a warm drink before bed. Consistency at the stated serving is the whole strategy. One serving most days is the goal; there is nothing to be gained by taking a double serving to make up for a missed day.

Storage and how long a jar lasts

Our gel is fresh food with no preservatives, so it lives in the fridge from the moment it arrives, and it has a use-by date and after-opening guidance printed on the jar. Follow those rather than a rule of thumb from the internet.

The basics:

  • Refrigerate immediately and put the jar back promptly after serving rather than leaving it on the counter.
  • Clean dry spoon, every time. Never a wet spoon, never one that has been in your mouth.
  • Keep the lid on tight, and keep the jar in the body of the fridge rather than the door, where the temperature swings most.
  • Freeze what you will not finish. Portion into an ice-cube tray, then move cubes to a bag. A cube thaws in the fridge overnight, or straight into a smoothie from frozen.

A 500ml jar at 2 tablespoons a day gives you roughly [CHECK] servings, so about [CHECK] weeks of daily use. If a jar is regularly going out of date before you finish it, freezing half on arrival solves it permanently.
